The Bologna Distillery is the oldest distillery on the island (1887). It is located at the foot of the Soufrière in Basse-Terre. Its store has been renovated for a year in 2018 in order to welcome customers in a very elegant setting.
In 2018, Bologna released a very wide range of very qualitative products, thus making up for its delay vis-à-vis other distilleries and in a very nice way.

This rum, in limited edition, is made from Cannes Noires, a very fragrant and very aromatic variety, exclusive to Bologna in Guadeloupe. Its low temperature column distillation allows it to keep all its exceptional aromas. It is undoubtedly a very beautiful rum!
The Coulisse

Unlike the Black Cane, the Coulisse is harvested and cut by hand. It then undergoes a maturation of 18 months. It is finer and high in alcohol (60 °) but its aromatic palette is sublime. A great taste experience!

The Distillate

It is the first Brut de Colonne of the house.
This name was given to it in honor of a former distiller who worked for thirty years at Bologna. The rum is left to stand for eighteen months. It is the fruit of distillation of red and black cane wines. These canes, crushed in June 2018 when it was very hot, were in exceptional sanitary condition.

La Batterie
Elle remplace la Coulisse. Elle est issue de la parcelle "Batterie" (anciennes ruines militaires) qui est également constituée uniquement de Cannes Noires.
Le micro climat est différent de celui de la Coulisse, plus exposé au soleil, au vent et moins proche des cours d'eau.
Elle bénéficie de 18 mois de maturation et délivre des arômes très proches de sa petite sœur mais sensiblement différents.
